How to make a fish roll: fish roll recipe by (frying and baking).

Fish roll is a pastry dish; it consists of dough and a filling. In this article, we will be looking at how to make a pastry dish called fish roll. It is very easy to make, just sit back grab a glass of juice and continue reading as we proceed.

What is a fish roll?

Fish roll is a deep-fried or baked pastry dish/ snack, having fish as its main ingredient. It is also made with other bakery confectionaries including flour, sugar, yeast, etc. fish roll is very popular in Nigeria and some other parts of Africa.

As a teenager, I love pastry snacks especially fish roll, chin-chin, and egg roll, they were my favorite. I can eat any one of these snacks a whole day without getting tired, with a pack of juice, milk, or even coffee I could just continue munching my chin-chin. Lol. I loved pastry snacks.

I always make one of these snacks for my family every weekend. The recipe is just amazing, I learned my first recipe from my Aunt, and it was one of a kind. So as a chef I kept experimenting until I found a richer and more delicious formula which I will be sharing today.

Simple homemade Croissants recipe

INGREDIENTS: (For the frying method)

Ingredients for the dough 

  • Flour – 3 cups (375grams)
  • Sugar – 8 tsp
  • Egg – 1 medium
  • Butter/ margarine – 50 grams
  • Yeast – 1 tbsp
  • Warm milk / warm water – ½ cup (or enough to get a smooth, firm dough)
  • Nutmeg (optional) – ½ tsp
  • Salt – pinch
  • Oil (canola) – (for frying)

Ingredients for the filling

  • Fish (mackerel) – 1 medium
  • Sardines – 1 can
  • Onion – (small finely chopped)
  • Cayenne pepper – ½ tsp
  • Curry – ¼ tsp
  • Salt to taste
  • Oil (cooking oil) – 2/3 tbsp
  • Seasoning cubes – ½ cube

Procedure for the filling 

  • Season your fish (mackerel) with onion, a little curry powder, salt to taste, and boil (you can also fry).

Boil for 5 – 7 minutes, transfer in bowl allow to cool down then you de-bone the fish and shred into small pieces, and set aside. Get your sardines using a fork mash them and also set them aside.

  • Add your cooking oil to a non-stick pan or saucepan at medium heat. Add your finely chopped onion, stir fry a little till it’s golden brown, then add cayenne pepper, de-boned fish, mashed sardines and continue to stir fry for 3 seconds then add your season cubes, curry if you have any secret ingredient like soy sauce, Worcestershire sauce, add it now. Stir fry for 1- 2 minutes till the flavors are combined, transfer in a bowl, and set to cool.

Procedures for the dough

  • In a large mixing bowl, measure and mix your flour, sugar, salt, and nutmeg, mix then add in your butter/ margarine and mix till it forms like bread crumbs.
  • Add your egg and mix thoroughly, measure your yeast in a small bowl and add little milk/ water and mix then transfer into a work surface and knead for 7 – 10 minutes.

Transfer in a bowl, using a cling film or clean cloth cover the bowl and allow to sit for 45 minutes.

  • Transfer dough back into your workspace cut out a bit. Using a rolling pin roll out the dough till it’s flat, then cut to form a rectangular shape. Afterward, add your filling (shouldn’t be much if the rolled-out dough is small so that It won’t burst while frying).

Wrap or roll the dough and seal the edges tight. repeat the same process for the remaining dough and set it aside

  • Place your frying pan at medium heat and fry the rolls pin hot oil (it should be deeply fried). Fry until brown. Serve and enjoy……….

If you are to use the baking method to prepare a fish roll

Don’t add yeast to the dough

After mixing the dough it should only rest for 5 – 10 minutes, before rolling it out. That’s all.

I can say I prefer the frying method but whatever is your preference is, both methods are amazing trust me.

Recipe for 50 pieces of fish roll

To make 50 pieces of fish roll you will only need to multiply ingredients according to the amount of fish rolls you need. The ingredients above is for 7 pieces of fish roll, for a medium size.

So what you need to do is to multiply each ingredients 7-8 times to get at least 50- 56 pieces, below is the recipe for 50 pieces of fish roll

For the dough:

  • Flour – 24 cups (3000grams)
  • Sugar – 64 tsps (320 grams)
  • Egg – 7 medium
  • Butter/ margarine – 300 grams
  • Yeast – 8 tsp
  • Warm milk / warm water – 3- 4 cups (or enough to get a smooth, firm dough)
  • Nutmeg (optional) – 2tsp
  • Salt – 1-2tsp
  • Oil (canola) – (for frying)

For the filling: 

  • Fish (mackerel) – 7 medium
  • Sardines – 7 can
  • Onion – (2 medium bulb finely chopped)
  • Cayenne pepper – 2-3tsp
  • Curry – 2-3 tsp
  • Salt to taste
  • Oil (cooking oil) – 5- 6 tbsp
  • Seasoning cubes – 3-4 cubes

Note:

In making this above recipe you have to use your discretion, having given you the main ingredients just multiply it, even if you need a 100 pieces multiply the above recipe by 2 and it will give you a perfect result.

Important notes:

  1. Make sure you seal the roll tight. Adding little water also helps to seal the rolls.
  2. Which one is better? Milk/water
  • Mixing the dough requires a liquid and the liquids are milk and water. They all work well and serve the same purpose but I prefer using milk because it comes out perfect you can use whole milk or evaporated milk plus a little water

What do I do if I have powdered milk?

  • You can simply get 1 cup of water + 1/3 cup of powdered milk and that’s your 1 cup of milk.
